Ginger Peach Chicken: REVIEW

Conclusion to the crock pot meals I made a couple weeks ago. I attempted to make 9 crock pot meals in an hour.  I fell short, but considered two hours (includes chopping and other prep) to be a reasonable compromise.  I also loved that my kitchen was not a disaster afterwards.

I almost forgot to make this meal at all, which would have been really sad for my family because I wasn’t going to be joining them for dinner. I threw it in the crock pot, significantly still frozen and left it completely unsupervised.


It cooked on low for the full 5 hours suggested.

Now, it is time for the ultimate test: Did it taste good?  I did not personally taste this meal. It had a very strong onion flavor therefore, for my family it was not a hit. The ginger flavor is also strong. I would compare this meal to the Curry Sweet Potato Chicken I did first.

It was an interesting meal and one I am glad that I tried, but I would not make it again anytime soon.  (I have a few once-a-year-foods that I force on my family to broaden their taste pallet, I could include this recipe in this category)

Ginger-Peach Chicken
Freeze in a bag:
2-lb boneless, skinless chicken thighs or breasts
12-ounce bag of frozen peach slices
1 red onion, sliced
2 tablespoons brown sugar
2 tablespoons soy sauce
1 tablespoon freshly grated ginger
2 teaspoons ground coriander
Cook on high for 4-5 hours.
Serve with rice.
